Broccoli Chilli Pinenuts with Feta Cheese

Broccoli is one of my favourite vegetables. Apart form its much publicised health properties, I love the crunchy taste of it. This is one of my favourite side-dishes that I make often. The idea for this dish came about by combining my favourite ingredients, broccoli, fresh chilli, pine nuts and feta cheese, lightly sautéed with olive oil and garlic. Together, this fresh tasting dish creates magic on your tastebuds. Ready in literally 15mins, this is a quick and easy side-dish, that goes with almost anything. You can even eat it as a main meal, just add a cup of boiled pasta to it, and you have a filling dish on your hands!

I used blue cheese in the pictures here, as that is what I had on hand at the time. Personally, I love blue cheese, but it is quiet pungent and not to everyone’s taste. AS hates it, but I love the nutty bold flavour of the cheese. This dish however, goes well with any kind of soft cheese like feta. goats cheese, blue cheese, or even ricotta. Though ricotta will not provide the sharp tang of flavour which the other soft cheeses provide. You can feel free to use whatever it is, that you have on hand or like the flavour of. For faster cooking, I blanch the broccoli for 2-3mins before i sauté it with garlic. Else, the garlic starts to get burned by the time your broccoli is cooked. I use fresh birds eye chilli, and some dried chilli flakes as well, as I like my food hot, but you can just as easily reduce the heat by deseeding the chilli, and not using the chilli flakes. The cheese is added at the end, after you have turned of the heat, so as not to melt the cheese.

Here’s the recipe

Broccoli Chilli Pinenuts with Feta Cheese

  • Servings: 4
  • Time: 30mins

  • 1 Broccoli head, washed and cut into florets, including the softer part of stems
  • 1 Birds-eye Chilli sliced
  • 3-4 cloves of Garlic finely minced
  • 2tbsp Olive Oil
  • 1/4 cup Pine Nuts
  • 1tsp Red Chilli Flakes
  • 50gm Feta Cheese
  • Salt and Crushed Black Pepper to taste


  1. Dry roast the pine-nuts in a pan over medium high heat for 2-3 mins, until lightly toasted. Remove from heat and set aside.
  2. In a large pot bring salted water to a boil. Add the broccoli in it for 2-3mins, until it turns bright green. Drain immediately and run under cold water to retain the green colour.
  3. Heat the olive oil over medium high heat. Add the garlic and let it sizzle. Add the dried chilli flakes, birds eye chilli, and the blanched broccoli as well.
  4. Sauté the broccoli for 5-7 minutes until its cooked, but still retains its crunch when bitten into. Take care to not overcook the broccoli. There is nothing more unappetising than soggy broccoli!
  5. Add the pine nuts. Season with salt and freshly ground black pepper, and toss it all together.
  6. Take it off the heat and crumble the cheese on top. Serve immediately.
